Cheeseburger stew

Here's a hearty and easy meal to cook. All done in one pot (my favorite kind of meals lol)

fry 1 1/2 to 2 pounds of lean ground beef or hamburger along with one large diced onion in a large pot. (Amount of beef varys due to how large of a family you will be cooking for. Use smaller amount for 2-3 people, larger amount for 4-6 people.  Same goes for potatoes ). Break apart beef as if fries. When no longer pink, add in 4 to 6 large potatoes that have been peeled and diced.  Add water to pot, just enough to cover potatoes. Do not cover with lid. You need some of the liquid to evaporate.  When potatoes are soft, add 1 bag of frozen vegetables.  Cook together until most of the liquid is gone. Add 1 tsp garlic salt.  Stir in 1 pkg. of mild cheddar cheese. Salt and pepper to taste. 

This dish does not have much eye appeal but it is very tasty.  Great for cold winter nights.

Pork Stir Fry with soy sauce, ginger, honey, lime sauce.

Now don't get scared away by the name of the recipe. This is extremely easy to do. The most time consuming part of the recipe is prepping the veggies. Okay, ready, here we go!!

Slice up some good stir fry veggies. Use the ones you like. Some suggestions are: peppers, zucchini, onions, broccoli, pea pods. If u use, pea pods, do not slice, use whole. Also do not use frozen vegetables. Fresh is best !!  Heat olive oil in frying pan. When oil is hot, add veggies. Do not overcook. You want your veggies to be crisp tender. Now this only means that you want your vegetables to be hot, but still crispy.

Make minute rice according to directions.  Make as much as you need.

Slice pork cutlets into small thing strips.
Heat some olive oil in a frying pan . Add pork strips into the hot oil. Cook until no longer pink.

For the sauce, place 1/4 to 1/2 bottle of soy sauce,  1/2 to 3/4 bottle of honey, 1 tsp ginger, and the juice of one lime into sauce pan.(Measurements on soy sauce and honey vary depending on how much sauce you want to make).   Stir constantly while it is heating through. Sauce is finished when sauce is slightyly thick. Cooking time is approximately 5 minutes.  To assemble dish, place heaping spoonful of rice into middle of plate. Drizzle some sauce onto rice. Add some veggies and pork to rice. Drizzle more sauce over the whole plate. Enjoy!!!!!

Hello everyone, I would like to introduce myself to you. I have been cooking for years, not professionally mind you, but at home for my friends and family. My grandmother taught me how to cook when I was little and learned my love of cooking form her. Like many ladies from her generation, she fried just about everything and always served a meat, potato and vegetable with her meals along with rolls or biscuits and desserts. Many of us do not have the time to do this style of cooking anymore. My goal with this blog is to share some of my families favorite recipes, encourage others to actually cook at home, and hopefully to learn the same love of cooking that I have.
